Ingredients
- 4 split chicken breast
- 1 egg
- 1/2 cup milk
- Ritz Crackers
- garlic salt
- 4 button mushrooms (rough chopped)
- shredded cheese
- crumbled bacon
- 2 stalks of green onions
- 4 cloves of garlic (about the same size)
Oil up a muffin pan with olive oil.
Mix the egg milk, and garlic salt together in one bowl, and crush up the ritz crackers in another.
Pound out the chicken breasts (at least double their original size, but not too thin). Dunk each breast into the egg/milk wash and then into the crackers then place them into each muffin section making sure to leave a pocket.
Place cheese, onions, mushrooms, bacon and a clove of garlic in each before pushing the rest of the chicken breast up and over to make a nice rounded “muffin” top.
Sprinkle the remaining crackers on top.
Place in a 375 degree oven and bake for 30 minutes. Then lightly drizzle olive oil on top and bake for another 10 minutes.
